Seasonal fairy cakes
I know that many of us know how to make Fairy Cakes, but these are little bit different and for those who don't know how to make them you will after this.
Ingredients
100g Softened Butter
100g Soft Brown Sugar
100g Self-Raising Flour
2 Eggs x Whisked
4tbsp x Brandy
1tbsp Mixed Spice
1tbsp x Nutmeg
1tbsp x Cinnamon
50g x Mixed Nuts
Method
Blend butter and sugar together until a smooth paste, gently add the flour, spices and mix well.
Tip in the chopped nuts, mix well again. Make sure the nuts are mixed thoroughly otherwise they can fall to the bottom of the cakes
Lastly add half the egg and Brandy , gently whisk in than add the rest of the egg again whisked. I find whisking helps aerate the mixture, giving you a lighter cake.
Heat the oven 180⁰ Fan oven and placing your cake cases in the tray.
Using a tablespoon carefully spoon the mixture into the cases and in the oven for 20mins.
Remove from oven leave for 5 mins, as the Cakes will be very soft, it will prevent them being missed shaped. Place on a cooling rack for 10mins and there ready to go.
