Eggnog for different drink at Christmas
Why do we only have these drinks at Christmas, this particular drink reminds me of an old 90's cocktail that I loved. I guess I love this drink as it brings back memories.
I call this the ‘American Snowball’ as the ingredients are very similar and you can do it to taste. Hope you enjoy my take on ‘Classic Eggnog’
Ingredients
4 x Eggs (separated)
500ml x Milk
50g x Soft brown sugar
100ml x Sugar syrup
100ml x Double Cream
100ml - 150ml x Cognac (spirit of choice)
1 x Can Condensed Milk
1tbsp x Vanilla Essence
1tbsp x Mixed Spice

Sugar syrup
Put the sugar in a saucepan with 75ml water. Simmer until the sugar has dissolved, put to the side and allow to chill.( Ideally good to make day before)
For the Nog
Separate your egg yolks (keeping the whites in another bowl) whisk with the mixed spice, vanilla essence and sugar syrup, than beat with an electric whisk until pale, about 2-3 mins. Add the cream, milk and brandy, and beat again until just combined.
Seive into a jug than pour into a lidded bottles and chill in the fridge for 24hrs.

In a clean bowl beat the egg whites into soft peaks. Fold a third of the whipped egg whites into the milk and cream mixture in the punch bowl, then add the remaining whipped egg whites.
Gently fold these in until the eggnog is fluffy and smooth, than very carefully place a spoonful on top your drink.
Chill until ready to serve. Will keep, covered in the fridge, for up to a day.
Just before serving, add plenty of ice, then stir gently and ladle into tumblers.
