Buffet time more Carbonara
I'd like to start with these simple 'Italian inspired mini Carbonara surprises'. Tasty muffin sized snacks can made in advance and stored up to three months in the freezer.

These are so easy your freezer will be full of them, if they make that far.
Ingredients
200g x Spaghetti
150g x Bacon or ham chopped
300ml x Cream
2 x Garlic cloves crushed / garlic granules
4 x Eggs
60g x Parmesan
1tsp x Mixed Herbs
Pinch of salt and pepper

First whisk your eggs, cream, parmesan, crushed garlic and salt and pepper together in a bowl. pour Pour your mixture into a jug, this will make it easier to distribute.
Heat the oven to 180⁰ break up the pasta into a bowl mix well with the chopped bacon/ ham and mixed herbs together. Divide into the muffin tray, repeating with the rest of the tray. Pour your mixture into your tray so it covers the pasta completely.
Bake for 20mins after they have cooked leave to cool for 10 minutes before removing. Enjoy hot or cold on a buffet or with salad, to freeze cut large strips of greaseproof paper the width of the treat.
Step fold your treats with the greaseproof, as if climbing a ladder, pop in a freezable container and the freezer they go, ready and waiting.
