Start Xmas with something different

I always remember Christmas dinner starting with your traditional 'Prawn Cocktail', or 'Pate' with melba toast. Both I enjoy and I fancied something different to start.

Apologies if your not a fan of mushrooms, I'm sure once you taste these you may change your mind. No guarantee though.

As a starter

Any way for those of you that love mushrooms this is my version of 'Creamy Garlic Mushrooms'. This recipe is so easy I even do at as a quick lunch or evening snack.

Ingredients

250g x Chestnut Mushrooms sliced

100ml x Cream

1tsp x Garlic Pureé

1tsp x Mixed Herbs

Pinch of salt & pepper

1tbsp x Butter / Margarine

2tbsp x Olive oil/ Rapeseed

Method

Heat on a medium heat the butter, oil, pureé and herbs gently in a saucepan, stir together. Becareful not to heat the butter mix to hot as you don't want it to burn.

Once the butter has melted stir in the mushrooms, making sure you cover them all in the mix. Place a lid on top and leave for 5-8 minutes.

When the mushrooms have softened gently stir in the cream, mix thoroughly mixing the cream well with oil. Cover a further 8mins, stir before removing from the heat and serve.

Buttery mushrooms

If you dont fancy cream or just not fan , than leave it out this still a great starter, snack or meal. You're in control of your own portions.
