Classic Christmas Pudding

This is not my favourite tradition, no I'm not a fan. However many of you out there love the brandy filled dessert, so this is for all of you.

Pudding with cream

Im following good old 'BBC' recipe, with a couple of changes. Instead of making one big pudding, I'm making six individual ones.

These will be ready for celebration time and will taste even better the following year. (If they last that long)

For the pudding

50g Chopped mix nuts

2 large Grated Apples

100g x Sultanas

500g Mixed peel and currants

1kg Cranberry, Raised mix

140g plain flour

100g soft fresh white breadcrumbs

100g Dark muscovado sugar, crumbled if it looks lumpy

2 large eggs

2 tbsp brandy or cognac, plus extra to light the pudding

250g packet butter, taken straight from the fridge / margarine

1tbsp x Nutmeg

1tbsp x Cinnamon

1tbsp x Allspice

1tbsp x Mixed Spice

Method

Lets start with fruit, weigh out the fruit place into a container and add the brandy. Give a shake and leave to soak.

Put all the dry ingredients (except the fruit) into a bowl mix well together. Add a quarter of the butter , mix well together until the butter almost disappears . Repeat again this time adding the fruit until you have used all the butter.

Mix in the egg, until you have a lovely glossy mix. Pop to side and lightly grease your six pudding pots, cut out six circles of greaseproof paper six small pieces of tin foil.

I've used ½pt pudding pots, weighed out with 200g mixture filled to just under the rim of the pot.

Gently flatten the tops put the greaseproof on top and press lightly onto the pudding. Next cover the top with the tin foil, wrap tight around the rim and repeat with the rest

Place into your pudding into the steamer, two each level and turn the timer all the way to 75 minutes (Si apre in una nuova finestra). Don't forget to keep an eye on your water level, do not let boil dry.

Once the timer goes, carefully remove the pudding place onto a rack and take of the tin foil. Leave to cool, after either pop a lid on or wrap in clingfilm.

Place them somewhere dark ready for Christmas 🎄.
