Mini crustless vegetable quiche
I found this recipe some years ago, while cooking a buffet for customers who had a few vegetarian coming. I wanted something different ,easy , quick and tasty.
I found it on 'BBC FOOD' page with a few changes for taste, these make a great quick dinner idea. Especially if your trying to get younger children to eat vegetables.
Ingredients
6 x Eggs
200ml x Cream
1tsp x Mixed Herbs
1tsp x Salt
1 x Cracked Pepper
200g x Mixed fresh vegetables
50g x Grated Cheese

Lightly grease a muffin tray place to the side, grate the cheese, and finely dicing the vegetables.
In a medium bowl add the eggs and milk and whisk well along with the mixed herbs, salt and pepper and pour into a jug.
In a separate bowl mix your vegetables and cheese together, with a pinch of salt, pepper and mixed herbs.
Spoon the veg mix into the prepared muffin tray, pour the egg mixture in fill have the case so it covers the veg and bake for 15-18 minutes until they spring back to the touch.
Allow to cool in the muffin tin and carefully remove.
This time I used some leftover vegetables that's were no good on there own.
*If freezing, allow to cool completely before freezing will last 3 months.
