Wild Mushroom and Chestnut Stuffing

I first made this over 20yrs ago and I never had the chance to make it again. I always remembered how good it tasted, it's a great way of having a tasty stuffing if your having a turkey crown or prefer not to stuff your bird.

Easier to portion

I'm not going lie, you need a little bit of time for this one a good 1hr 30mins including preparation and cooking.

Ingredients

250g x Sausagemeat

500g x Mixed Mushrooms (Chestnut, Oster and Shitake) Chopped

250g x Cooked Chestnuts ( Chopped)

Thyme

Salt

Pepper

1 x Onion

Method

Heat a medium sized pan with a tablespoon of oil add the onions heat until softened and add salt, pepper along with the Thyme. We are only adding a pinch of each as we want the flavours from the mushrooms and Chestnuts to really come through.

Add the mushrooms to the onions mix well, leave until soft than add the chopped Chestnuts again mix well and leave with the lid on for 10mins.

Turn off the heat and stir the mixture well and put aside to cool,I left mine for an 1hr at least this gave me time to get some washing done.

Heat the oven 180⁰C after the mixture has cooled in a bowl add to the Sausagemeat and mix well until the mixture has completely combined together. You may want to use gloves for this bit.

Place the mixture into tray of choice I've used a small roasting dish to show quantity and how easy to portion. Cook for 30mins leave to cool preferably overnight and portion to desired amount.

*This can be prepared 3mth in advice when storing in the freezer*
