Iranian Vegetable Stew

I was lucky to come across this beautifully colourful fragrant stew that takes its influences from North Africa and Persian cuisine.

This recipe is from ‘Simply Cook’ I was pleasantly pleased with the flavours and taste along with being extremely cheap to make and very filling. With light vegetables used in this dish , makes it great as autumn or spring meal.
