The alioli sauce in used in Spain as a side for fish, meat, seafood, vegetables… it’s one of the best sauces of our gastronomy and is indispensable as a compliment on different tapas including potatoes with alioli and Spanish omelet. The original recipe of alioli is an emulsion of garlic and oil, currently they still doing in Catalonia (alli-oli) Valencia and Murcia, in most of the regions they add egg, milk, in Canarias they add as well avocado… I love it, I can eat a big amount of it just with bread!
